INGREDIENTS:
2 – 4 oz salmon filets
2 Tbsp chopped fresh basil
1 Tbsp chopped fresh parsley
1 tsp minced fresh garlic
2 tsp lemon juice
salt and cracked black pepper – to taste
4 green olives - chopped
2 lemon slices (thin)
extra-virgin olive oil for cooking
DIRECTIONS:
Coat your grill or broiler pan with canola oil.
Position the cooking rack 4 to 6 inches from the heat source.
Brush the fish with extra virgin olive oil. Season with salt and pepper.
In a small bowl, combine the basil, parsley, minced garlic and lemon juice.
Place the fish on the grill or pan.
Grill over high heat.
When the edges turn opaque, about 3 - 4 minutes, turn fish over.
Reduce the heat and lower the broiler pan further away (about 4 inches) if using the oven as your heat source.
Top each filet with equal amounts of the basil-garlic mixture.
Grill about 4 minutes longer until the fish is opaque throughout, or when tested with an instant read thermometer (145o F).
Remove the salmon and place on warm plates.
Garnish with olives and lemon slices.
