INGREDIENTS:


2 – 4 oz boneless skinless chicken breasts

¾ cup chopped celery

¾ cup whole pearl onions(frozen is fine)

1 tsp fresh tarragon

1 cup chicken broth – low sodium

¾ cup dry white wine

½ cup uncooked long grain rice

½ cup uncooked wild rice

extra virgin olive oil – for pan


DIRECTIONS:


  1. Preheat oven to 350ºF

  2. In a baking dish, combine the wine, ¾ cup of chicken broth and rice. Let soak for 30 minutes.

  3. Coat your frying pan with extra-virgin olive oil.

  4. Cut chicken breasts into ½ to 1 inch pieces.

  5. Combine the chicken, celery, pearl onions and tarragon, plus remaining ¼ cup of the unsalted chicken broth, in the oiled frying pan.

  6. Cook on medium heat until the chicken and vegetables are tender, about 10 minutes. Set aside.

  7. Add the cooked chicken and vegetables to the baking dish.

  8. Cover and bake for 60 minutes.

  9. Check periodically and add more broth if the rice is too dry.

  10. Serve immediately
